“People don’t realize that we are actually located in the middle of the Fraser River,” says Morgan Lechner, Executive Chef of the Pacific Gateway Hotel’s signature restaurant, Pier 73. “We’re out on stilts on a long pier surrounded by a brand new marina. There’s a 6,000 square foot deck and patio with a day dock off the end.”
Although Pier 73 is part of the Pacific Gateway Hotel at Vancouver Airport, restaurant General Manager, Tim Lattimore, notes that it is much more than just another airport eatery.
“We want people to know about the passion we have about knowing where our food comes from. We work with B.C. suppliers as much as possible, whether it’s for Morgan’s menu selection or for our craft beer and wine lists, both of which are very B.C. heavy. We’re much more than a hotel restaurant.”
The menu features fish supplied by local fisherman, grass fed beef, ultra-fresh produce, and pork from an ethical Fraser Valley pig farmer.
“Gelderman Farms in Abbotsford limit stress in the pigs’ lives by giving them access to fresh air and the ability to generally root and act like pigs. The resulting difference in the quality and taste of the meat is amazing,” notes Chef Morgan.
