French twist on Chinese mid-autumn moon cakes

An international award-winning Richmond chocolatier is helping celebrate 2016 Chinese Mid-Autumn Festival in style. Wild Sweets (dcduby.com) began selling its special “East-Meets-West” collection of Chocolate Art Moon Cakes Bouchées on Aug. 15.

An international award-winning Richmond chocolatier is helping celebrate 2016 Chinese Mid-Autumn Festival in style. Wild Sweets (dcduby.com) began selling its special “East-Meets-West” collection of Chocolate Art Moon Cakes Bouchées on Aug. 15. The series features specific sweet ingredients commonly found in traditional Chinese Moon Cakes, yet are crafted using modern French based chocolate-making techniques. Dough for the cakes is also based on a crunchy French ‘Sablé Breton’ cookie that is made from sweet butter, egg yolks, sugar, flour and baking powder, which provides its ‘sandy’ texture. And the most unique component is the chocolate element, which is a soft ganache made with different fruit-based liquid caramels, providing a smooth and creamy texture contrast to the dough and filling.
